This paper presents the practical results of lactic acid removal by yeast treatment, pulverizing conditions and nutritional evaluation of CSL powder. \nThe following results were obtained : \n1. Yeast treatment remarkably reduced lactic acid content in CSL from 20% to 1.5%. \n2. CSL treated with yeast could be easily pulverized by a spray or film dryer. \n3. The moisture adsorption activity of CSL powder depends on lactic acid concentration. \n4. Analytical results of CSL powder on protein content, amino acid composition, vitamines and other components showed CSL powder to be improved more nutritionally that the original CSL.. \n5.
