| 内容記述 | マイワシ，サバなどの多獲性魚類を処理加工して有効に利用するためには，魚体処理機及び装置が必要となるが，適当なものはあまりないようである。最近，多獲性赤身魚の高度利用に関する総合的な研究が行なわれ，その研究において開発された魚体選別機，自動調理機等の機械装置は，価格や小型化等についてさらに検討すべき点があるが，生産面で活用されていることが報告されている（水産庁 研究部 1982，1983）。この研究結果は魚体の大きさが中以上のサバ，イワシについて得られたものであり，将来はより小さい魚体のものに適する機械装置が開発されるであろうが，比較的に魚体の小さいアジ，サバ，イワシなどの漁獲量も多い現状から，金魚体を一括利用する方法の一つとして金魚体の液化利用について研究を行うことにした。 近年における魚類たんばく質の酵素分解に関する研究の多くは，筋肉やFPC（Fish protein concentrate）を対象としたもので，金魚体の分解に関する報告例は少なく，井関ら（1968，1973）及び杉井ら（1973）が「魚類液化たんぱく」に関する一連の研究において，7種類の市販のたんばく質分解酵素剤によるマアジ，サバ，スケトウダラなど金魚体の液化を検討した報告のほか，Razumovskayaら（1980）が Bacillus subtillis 起源のたんばく質分解酵素を使用してカラフトシシャモ Mallotus villosus と Alewife Pomolobus pseudoharengus などの全魚体の液化を行った報告等があるにすぎない 。 このようなことから，本実験ではまず全魚体の液化についての知見を得るために，市販酵素剤12種類のなかから適当なものを選び，液化条件，窒素収量，液化物の色調，におい，ペプチド構成などについて検討を加えた。得られた結果を次に報告する。 |

| 内容記述 | The purpose of the present paper is to study the hydrolyses of 12 different kinds of commercially available protease preparations on whole fish body, to utilize fish of small size which are caught abundantly. In this investigation horse mackerels (body length,13-16cm) are used as materials,and the results obtained are summarized as follows. Among 12 kinds of the protease preparations used, the best result was achieved by Actinase and Protease M. When the hydrolysis of whole horse mackerel with Actinase was carried out at 50℃ for 6 hrs under non-adjusting pH condition, the yield of soluble nitrogen in the hydrolysate obtained approximated to 89%. This hydrolysate was yellowish brown,and had a delicate,but slightly bitter flavour.The result of gel filtration of this hydrolysate indicated that its nitrogenous coumpounds were nearly all free amino acid and lower molecular peptides(average number of amino acid in peptides was >3). On the other hand,when whole horse mackrel was digested with Protease M at pH 4.5 and 50℃ for 6 hrs,the soluble nitrogen content in this resulting hydrolysate attainable was 84.3%. The hydrolysate was a pale yellowish brown, and had as delicate a flavour as the former, and had acidty as well, but it was less bitter than the former. The free amino acids and lower molecular peptides in the hydrolysate attainable was 86%. Consequently, it was considered that the effect of Protease M bore comparison with Actinase. |
